Yucca is Yumma (part 2)

Maria whipped up another incredible meal with Yucca today — Yucca Cakes stuffed with Chicken!!!

Here’s how she did it:

Preparation for Yucca Cakes:

  • Boil Yucca until very soft and make into little yucca pancakes
  • Shred some boiled chicken in a food processor
  • Spoon the shredded chicken and on top of yucca
  • Add a spoonful of hogao sauce on top and fold (to make a tart or stuffed cake)
  • Pan fry yucca cakes with a little vegetable oil and flour and Mumbo Jumbo — EVERYDAY over medium heat until golden brown.
  • Serve with tortillas and hogao sauce or salsa

Recipe for Hogao (pronounced O-Gow): mix olive oil, chopped tomato, diced onion, and chopped green onion

My friend Maria from Colombia has been teaching me a little about food from her country.   She’s recently been making some incredible dishes with yucca.  I had heard of and seen yucca in the store, but I had no idea how to cook with it.

Maria made a great side dish with “mashed” yucca the other day.  We served it with some pork chops with Mumbo Jumbo — EVERYDAY and a thinly sliced green tomato…yum!

Here’s the “Mashed Yucca” recipe:

Instructions:

  • Cut open yucca and remove “core”.
  • Chop into small pieces and boil until tender (20 to 30 min.).
  • In a separate dish mix olive oil, chopped tomato, diced onion, and chopped green onion (this is called Hogao and is pronounced “O-Gow”).
  • In yet a separate pan (we like to wash dishes) scramble 1 egg and mix in Hogao.
  • Add Hogao and egg mixture to yucca and sprinkle in Mumbo Jumbo — MESA seasoning.
  • Stir yucca until you have a nice mashed consistency….Kapow!

We had a great time at the Metropolitan Cooking and Entertainment Show this past weekend. We met a lot of great people and cooked a ton of food on a very small grill.  Thanks to everyone that stopped by our booth. We hope you had as much fun as we did.  Shake… Grill… Enjoy!

Mumbo Jumbo Mesa Souflee!

mesa-souflee_0.jpg Steve Ring emailed me a picture of an unbelievable souffle his wife made with Mumbo Jumbo MESA seasoning last week.  Great pic but next time invite me for lunch!

Incidentally, Steve owns a fantastic store in Decatur, GA called Taste.  Taste offers a variety of hard-to-find gift items, gourmet foods, and cooking gear.  I highly recommend a trip to Taste the next time your shopping in Decatur.
