Grilled Pollock with {Everyday}, New Potatoes, and Fresh Garden Salad

img_0356_edited.jpg I had a great, healthy lunch today prepared in a snap!  Grilled pollock fish dusted with Mumbo Jumbo — Everyday seasoning, boiled new potatoes (with a little cream), and a fresh garden salad with vinegar dressing.  Give it a try…you won’t be disappointed.  Shake…Grill…Enjoy, Jeremy

JAVA Blackened Swordfish with Squash and Onions

This is a great healthy recipe, and one I cook all the time.  You can substitute swordfish with any type of white fish like tilapia or catfish.

Preparation:

Prior to cooking, vigorously dust swordfish with Mumbo Jumbo — JAVA seasoning

Directions:

In a large pan, pour a small amount of olive oil so that pan is evenly coated.  Cook swordfish steaks over medium / high heat for appox. 6 to 8 minutes per side (until fish is tender and done).  Meanwhile, in a medim sized pan saute thinly sliced yellow squash, zucchini, and small onion in olive oil over medium heat.  Cook until onion is transluscent and squash is tender
